How to Make Summer Squash Orzo Skillet with Chicken Meatballs

  1. Prepare the Meatballs: In a large bowl, mix together the ground chicken, panko breadcrumbs, Italian seasoning, egg, ½ teaspoon sea salt, and minced garlic. Form this mixture into meatballs about 1.5 tablespoons each and set aside.
  2. Brown the Meatballs: Heat 2 tablespoons of olive oil in a large nonstick skillet over medium-high heat. Once hot, add the meatballs, browning them on two sides. They don’t need to be fully cooked yet as they’ll finish cooking in the sauce later. Remove them from the skillet and set aside.
  3. Cook the Veggies: In the same skillet, add 1 tablespoon of olive oil and reduce the heat to medium. Add the diced onion with ¼ teaspoon of salt, cooking for 2-3 minutes until soft. Toss in the sliced zucchini and cherry tomatoes, sautéing for another minute until just tender.
  4. Toast the Orzo: Stir in the orzo, toasting it for 1-2 minutes until lightly browned. This step adds a nice nutty flavor to the pasta.
  5. Combine & Simmer: Add the lemon zest, chicken broth, lemon juice, heavy cream, and the remaining ½ teaspoon sea salt. Stir everything together and bring to a gentle boil. Once boiling, reduce the heat to low and carefully add the meatballs back into the skillet. Cover and let everything simmer for 7-10 minutes, or until the orzo is tender, and most of the liquid is absorbed.
  6. Finish & Serve: Once the orzo is cooked through and the meatballs are fully cooked, remove the skillet from the heat. Top the entire skillet with grated parmesan cheese and serve hot, garnished with creamy burrata cheese if desired.

Storing & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. If you’d like to freeze your dish, pack it in a freezer-friendly container, making sure to eat it within 3 months for the best taste. When reheating, place in the microwave for about 1-2 minutes or heat gently on the stovetop over low heat. The orzo may absorb some liquid during storage, so a splash of chicken broth or cream can refresh the texture.

Chef’s Helpful Tips

  • Don’t Overmix the Meatballs: Mixing too much can make them tough. Go gentle when combining.
  • Sauté Zucchini Until Tender: Don’t overcook your zucchini; they’re best when they still have a slight crunch.
  • Use Fresh Herbs: If you have basil or parsley on hand, feel free to toss in some chopped fresh herbs for extra flavor.
  • Taste Your Liquid: Always taste your chicken broth before adding salt to avoid over-seasoning.
  • Make It Ahead: This dish can be made in advance and simply reheated for an easy lunch or dinner.

This delightful Summer Squash Orzo Skillet with Chicken Meatballs not only satisfies the palate but also celebrates the best of summer produce. Each component—from the juicy chicken meatballs to the creamy finish of the burrata—creates a dish that’s bound to become a favorite in your household. Don’t hesitate to play around with veggies or add spices that your family loves!
