- 2 cups heavy cream cold
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoon vanilla instant pudding
- ⅔ cup irish cream
- 1 lbs mascarpone cheese room temp
- 27 ladyfingers
- 1 cup espresso
- 2 tablespoon irish cream
- 2 tablespoon cocoa powder
Instructions
- In a large mixing bowl, combine the cold heavy cream, sugar, Bailey's Irish cream, vanilla extract, and vanilla instant pudding. Use an electric mixer to whip until soft peaks form.
- Add the room-temperature mascarpone cheese to the whipped cream mixture and blend until smooth and creamy. Avoid overmixing to prevent curdling.
- In a shallow bowl, create a mixture of espresso and Bailey's Irish cream. Quickly dip ladyfingers into this mix for 1-2 seconds and arrange them in a single layer in a 13 by 9-inch baking dish.
- Spread half of the mascarpone mixture over the soaked ladyfingers, smoothing it out with a spatula.
- Layer another set of dipped ladyfingers on top, followed by a thin layer of the remaining mascarpone cream.
- Use a piping bag fitted with a round tip to distribute dollops of the remaining cream over the mascarpone layer.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours to allow the ladyfingers to soften. Before serving, dust generously with cocoa powder.
Notes
Make sure the mascarpone cheese is at room temperature for easier mixing.
For a stronger coffee flavor, allow the espresso to cool before mixing with the ladyfingers.
Chilling for longer enhances the flavors; overnight refrigeration is even better.
