Description

These Baked Chicken Thighs are incredibly juicy and flavored with garlic and herbs. Perfect for a quick dinner or a comforting meal, this dish is sure to please family and friends.


Ingredients

  • 8 chicken thighs (bone-in, skin-on)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 ½ teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  • Preheat the oven to 425°F (220°C). Bring the chicken thighs to room temperature and pat them dry with a paper towel.
  • In a small bowl, combine all herbs and spices to create the seasoning mix.
  • In a large mixing bowl, add the chicken and drizzle with olive oil. Sprinkle ⅔ of the spice blend over the chicken and mix until thoroughly coated, including under the skin.
  • Place the chicken on a rack over a baking sheet and sprinkle the remaining seasoning on top.
  • Bake the chicken thighs for 35 to 40 minutes, until the internal temperature reaches 170°F. Optionally, use the broiler for 2 to 3 minutes for extra crispiness, then let rest for 5 minutes before serving.

Notes

Patting the chicken dry helps to achieve a crispy skin.
Feel free to marinate the chicken with the seasoning for a few hours or overnight for enhanced flavor.
