- 8 chicken thighs (bone-in, skin-on)
- 2 tablespoons extra virgin olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 ½ teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 425°F (220°C). Bring the chicken thighs to room temperature and pat them dry with a paper towel.
- In a small bowl, combine all herbs and spices to create the seasoning mix.
- In a large mixing bowl, add the chicken and drizzle with olive oil. Sprinkle ⅔ of the spice blend over the chicken and mix until thoroughly coated, including under the skin.
- Place the chicken on a rack over a baking sheet and sprinkle the remaining seasoning on top.
- Bake the chicken thighs for 35 to 40 minutes, until the internal temperature reaches 170°F. Optionally, use the broiler for 2 to 3 minutes for extra crispiness, then let rest for 5 minutes before serving.
Notes
Patting the chicken dry helps to achieve a crispy skin.
Feel free to marinate the chicken with the seasoning for a few hours or overnight for enhanced flavor.
