Description

This Beef Burrito features tantalizing flavors with seasoned ground beef, black beans, and cheese wrapped in soft tortillas. It’s quick to prepare, making it ideal for weeknight dinners or a satisfying lunch. Enjoy it with your favorite toppings for an irresistible homemade treat!

  • 1 tablespoon canola oil or neutral cooking oil of choice
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion (¼-inch diced)
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat oil in a large skillet over medium-high heat. Swirl to coat, then add ground beef. Press down into a 1/2-inch thickness and cook for 3 to 4 minutes until it forms a crust.
  2. Add chili powder, oregano, cumin, salt, garlic powder, smoked paprika, and scatter onion over beef. Break meat into small pieces and cook until browned, about 4 minutes more.
  3. Stir in black beans and salsa. Cook until mostly liquid has evaporated and beans are warmed, about 1 minute. Adjust seasoning if needed.
  4. To assemble, place a tortilla on a surface and sprinkle 3 tablespoons of cheese down the center. Add one-sixth of the beef mixture and more cheese on top.
  5. Fold in the sides of the tortilla, then roll it over the filling to enclose it. Repeat with all tortillas.
  6. For serving, warm a nonstick skillet over medium heat. Brown each burrito seam side down for 1 to 2 minutes until golden; flip to brown the other side. Let cool for a few minutes before serving with toppings.

Notes

Feel free to add your favorite toppings like hot sauce or sour cream for extra flavor.
You can customize the fillings with different proteins or vegetables if desired.
For meal prep, burritos can be wrapped tightly and frozen for a quick meal later.
