- 1 tablespoon canola oil or neutral cooking oil of choice
- 1 pound lean ground beef
- 1 ½ teaspoons chili powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- ¾ teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- 1 small yellow or white onion (¼-inch diced)
- 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
- 1 cup prepared salsa
- 6 burrito-size flour tortillas (about 10 inches)
- 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
- Sour cream
- Avocado
- Hot sauce
- Chopped fresh cilantro
Instructions
- Heat oil in a large skillet over medium-high heat. Swirl to coat, then add ground beef. Press down into a 1/2-inch thickness and cook for 3 to 4 minutes until it forms a crust.
- Add chili powder, oregano, cumin, salt, garlic powder, smoked paprika, and scatter onion over beef. Break meat into small pieces and cook until browned, about 4 minutes more.
- Stir in black beans and salsa. Cook until mostly liquid has evaporated and beans are warmed, about 1 minute. Adjust seasoning if needed.
- To assemble, place a tortilla on a surface and sprinkle 3 tablespoons of cheese down the center. Add one-sixth of the beef mixture and more cheese on top.
- Fold in the sides of the tortilla, then roll it over the filling to enclose it. Repeat with all tortillas.
- For serving, warm a nonstick skillet over medium heat. Brown each burrito seam side down for 1 to 2 minutes until golden; flip to brown the other side. Let cool for a few minutes before serving with toppings.
