Description

  • 3 medium carrots (peeled and roughly chopped (about 1011 oz))
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 2.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 14 ounces sweetened condensed milk (one 14 oz can)
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons unsalted butter
  • 1/3 cup evaporated milk
  • 1/3 cup dark chocolate chips
  • chocolate sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a blender, combine the chopped carrots, eggs, vegetable oil, and sugar. Blend until smooth, about 60 seconds.
  3. In a large bowl, whisk together the flour, baking powder, and salt.
  4. Pour the carrot mixture into the bowl with the dry ingredients and fold until just combined.
  5. Pour the batter into the prepared baking pan and bake for 24-28 minutes until a toothpick comes out clean.
  6. For the glaze, combine the sweetened condensed milk, cocoa powder, and butter in a saucepan over medium heat, stirring until smooth and thickened, about 5 minutes.
  7. Stir in the evaporated milk and simmer for an additional 2-3 minutes until thickened again.
  8. Remove from heat and mix in the dark chocolate chips until melted and glossy.
  9. Cool the cake in the pan for 10 minutes, then pour the warm chocolate glaze over the cake, spreading it evenly. Top with chocolate sprinkles.
  10. Let the cake cool completely before slicing.

Notes

Allowing the cake to cool slightly before applying the glaze helps it to soak in better.
Make sure to whisk the dry ingredients well to ensure even distribution.
You can use any type of chocolate sprinkles for decorating.
