- 1 medium head green cabbage (~2 pounds), cored and chopped into 1½-inch pieces
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon fine sea salt
- 1 teaspoon garlic powder
- 1/2 teaspoon freshly cracked black pepper

Instructions
- Preheat your oven to 425°F (220°C).
- Place the cabbage pieces on a baking sheet. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika. Toss until well coated.
- Arrange the cabbage in a single layer on the baking sheet and roast for 20–25 minutes, tossing once at the 15-minute mark, until tender and nicely browned.
- For added crispiness, broil for 1–2 minutes, keeping a close eye on it.
- Remove from the oven and add any desired toppings. Adjust seasoning to taste and serve warm.
