- 2 cups granulated sugar

- ½ cup salted butter, softened
- 8 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 1 pound powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, mix together the applesauce or oil, sugar, and eggs until well combined.
- Add the flour, baking soda, baking powder, salt, and cinnamon. Mix until the dry ingredients are incorporated.
- Stir in the grated carrots, shredded coconut, chopped nuts, and vanilla extract.
- Gently fold in the crushed pineapple until evenly distributed in the batter.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for about 25 minutes, or until a toothpick inserted in the center comes out clean. Allow the bars to cool in the pan.
- In another bowl, beat together the softened cream cheese, butter, and vanilla extract.
- Gradually add in the powdered sugar, mixing until smooth and creamy to create the frosting.
- Spread the cream cheese frosting over the cooled bars before cutting into squares.
Notes
Using applesauce instead of oil can reduce the calorie content and add moisture.
For extra flavor, consider adding spices such as nutmeg or ginger to the batter.
These bars can be refrigerated for up to 5 days and freeze well for longer storage.
