Description

Ingredients

  • 4 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg yolk
  • 3/4 tsp vanilla
  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 1 egg
  • 1 tbsp vanilla
  • 1 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup carrots, shredded

Instructions

  1. Preheat the oven to 350 degrees F and prepare an 8 x 8 pan with non-stick spray.
  2. In a medium bowl, combine melted butter and brown sugar.
  3. Mix them together until combined.
  4. Stir in the egg and vanilla extract until mixed well.
  5. Add flour, cinnamon, baking powder, and salt. Stir until fully incorporated.
  6. Fold in the shredded carrots gently.
  7. In a separate bowl, blend softened cream cheese with sugar until smooth.
  8. Mix in the egg yolk and vanilla extract until creamy.
  9. Spread half of the carrot cake batter evenly in the prepared pan.
  10. Dollop half of the cheesecake mixture onto the batter.
  11. Pour the remaining carrot cake batter over the cheesecake mixture, followed by the remaining cheesecake mixture.
  12. Swirl the batters together using a knife as desired.
  13. Bake for 35-40 minutes until the edges are golden, and the center has a slight jiggle.
  14. Allow to cool completely before cutting into bars.

Notes

For extra flavor, consider adding nuts or raisins to the batter.
Ensure the cream cheese is softened to achieve a smooth texture.
Store leftovers in an airtight container to keep them fresh.
