- 6 garlic cloves
- 2 tbsp fresh basil
- 2 tbsp dried oregano
- 2 bay leaves
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/4 cup brown sugar
- 1 cup green olives
- 1 cup pitted prunes
- 2 tbsp capers
- 1 tsp salt
- 4 pounds chicken thighs
- 1/2 cup white wine
- 1/4 cup fresh parsley
Instructions
- Peel and chop the garlic cloves, then mix them in a large glass or ceramic bowl with basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
- Add green olives, pitted prunes, capers, and a good pinch of salt. Mix well to coat the chicken thighs in the marinade and then cover the bowl with plastic wrap.
- Refrigerate for at least 3 hours or overnight for best results.
- Preheat the oven to 180C/350F and arrange the chicken along with the marinade on a large baking pan, or split between two smaller pans to avoid overcrowding.
- Pour the white wine around the chicken, making sure not to pour directly on it for a crispy skin texture.
- Roast in the preheated oven for 50 minutes to 1 hour or until the chicken reaches an internal temperature of 74C/165F and the skins are golden. Garnish with chopped parsley before serving.
Notes
For best results, marinade the chicken overnight to enhance flavor.
Make sure to check the chicken’s internal temperature with a meat thermometer for perfect doneness.
Using pitted olives and prunes will save time and hassle.
