Description

This Classic Creamy Coleslaw features a blend of fresh cabbage, crisp carrots, and a tangy dressing, making it an ideal side for any meal. With a simple preparation, it’s perfect for barbecues or as a refreshing addition to your dinner table.


Ingredients

  • 1 pound green cabbage, shredded (about 6 cups)
  • 1 cup shredded carrots
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons granulated sugar
  • 1 cup mayonnaise
  • ½ teaspoon celery seed
  • kosher salt and freshly-ground black pepper

Instructions

  1. In a large bowl, combine shredded cabbage and carrots with 1 tablespoon of kosher salt. Allow to sit for 1 hour in a mesh colander over another bowl to drain excess moisture.
  2. After an hour, discard the collected water and rinse the cabbage and carrots. Dry them thoroughly using a salad spinner or by patting dry with paper towels. Place the dried mixture back in the bowl.
  3. In a separate bowl, mix together apple cider vinegar and sugar, stirring until the sugar is fully dissolved. Then whisk in the mayonnaise, celery seed, 1/4 teaspoon kosher salt, and 1/2 teaspoon black pepper.
  4. Dress the cabbage and carrot mixture with the prepared dressing, adjusting the amount according to your preference. Season with additional salt and pepper, if needed.
  5. Cover the bowl and refrigerate for at least 1 hour before serving. The coleslaw can be stored covered in the refrigerator for up to 3 days.

Notes

This coleslaw tastes better if allowed to chill in the fridge for a few hours; flavors meld beautifully.
You can adjust the sweetness by adding more or less sugar based on your taste preference.
