- 1 pound green cabbage, shredded (about 6 cups)
- 1 cup shredded carrots
- 3 tablespoons apple cider vinegar
- 3 tablespoons granulated sugar
- 1 cup mayonnaise
- ½ teaspoon celery seed
- kosher salt and freshly-ground black pepper
Instructions
- In a large bowl, combine shredded cabbage and carrots with 1 tablespoon of kosher salt. Allow to sit for 1 hour in a mesh colander over another bowl to drain excess moisture.
- After an hour, discard the collected water and rinse the cabbage and carrots. Dry them thoroughly using a salad spinner or by patting dry with paper towels. Place the dried mixture back in the bowl.
- In a separate bowl, mix together apple cider vinegar and sugar, stirring until the sugar is fully dissolved. Then whisk in the mayonnaise, celery seed, 1/4 teaspoon kosher salt, and 1/2 teaspoon black pepper.
- Dress the cabbage and carrot mixture with the prepared dressing, adjusting the amount according to your preference. Season with additional salt and pepper, if needed.
- Cover the bowl and refrigerate for at least 1 hour before serving. The coleslaw can be stored covered in the refrigerator for up to 3 days.
Notes
This coleslaw tastes better if allowed to chill in the fridge for a few hours; flavors meld beautifully.
You can adjust the sweetness by adding more or less sugar based on your taste preference.
