- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- 1/4 cup sugar
- 2/3 cup almond flour
- 1/4 cup cocoa powder
- 1/4 tsp baking soda
- 1 pinch of salt
- 1/3 cup chocolate chips
Instructions
- Preheat your oven to 325°F and grease an 8×8 inch baking dish with butter or cooking spray.
- In a blender, combine cottage cheese, eggs, vanilla extract, maple syrup, and sugar. Blend on high speed for 60-90 seconds until smooth.
- In a separate bowl, whisk together almond flour, cocoa powder, baking soda, and salt.
- Pour the blended wet mixture into the dry ingredient mixture and fold together gently with a spatula until just combined.
- Fold in the chocolate chips and pour the batter into the prepared baking dish. Spread evenly and optionally press some chocolate chips on top.
- Bake for 18-22 minutes until the top is set and a toothpick inserted in the center comes out with moist crumbs. Allow to cool for 5 minutes before cutting into squares.
