  • 2/3 cup cottage cheese blended
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1/3 cup cacao powder
  • 1/4 tsp baking soda
  • 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper or grease it well.
  2. Blend the cottage cheese until smooth, resembling a thick yogurt consistency, then set aside.
  3. In a large bowl, whisk together the eggs, vanilla, coconut sugar, and maple syrup. Mix in the blended cottage cheese until well combined.
  4. Incorporate the almond flour, cacao powder, and baking soda into the mixture, stirring until a smooth batter forms.
  5. Gently fold in the chocolate chips, reserving a few for sprinkling on top if desired.
  6. Pour the prepared batter into the baking dish, spreading it evenly and topping with any leftover chocolate chips.
  7. Bake for approximately 24–26 minutes, or until a toothpick inserted comes out with a few moist crumbs, ensuring they remain fudgy.
  8. Allow the brownies to cool in the pan for at least 15–20 minutes before slicing, as they will continue to set.

Notes

For a richer flavor, use dark chocolate chips.
These brownies can be stored in an airtight container for up to 5 days.
Feel free to substitute the coconut sugar with brown sugar if preferred.
