- 1 (10-ounce) can mild diced tomatoes with green chiles
- 3 bell peppers (green, yellow, and red, sliced into strips)
- 1 large yellow onion (sliced)
- 4 cloves garlic (minced)
- 1 ½ pounds boneless skinless chicken breasts
- 1 (1.25-ounce) packet fajita seasoning mix
- ½ teaspoon black pepper
- 2 tablespoons fresh lime juice (1 lime)
- Soft shell fajita tortillas (warmed, optional for serving)
- Fresh chopped cilantro (optional for serving)
- Sour cream (optional for serving)
Instructions
- Add the diced tomatoes, sliced peppers, onion, minced garlic, and chicken to a 6-quart or larger slow cooker.
- Sprinkle the fajita seasoning and black pepper over the chicken, then pour in the lime juice.
- Cover the cooker and set it to cook on low for 6–8 hours or on high for about 4 hours, until the chicken is fully cooked and tender.
- Once cooked, remove the chicken and shred it using two forks. Return it to the slow cooker and stir to mix with the juices and vegetables.
- Serve the fajitas in warmed tortillas, topping with cilantro and sour cream if desired.
Notes
For added heat, use spicy diced tomatoes instead of mild.
Make it a complete meal by serving with rice or beans on the side.
This dish can be made a day ahead and reheated for convenient leftovers.
