Description

This Crockpot Chicken Reuben Casserole combines tender chicken, tangy sauerkraut, and melted Swiss cheese for a comforting dish that is simple to prepare and perfect for gatherings or a cozy dinner.


Ingredients

  • 2 lbs. boneless skinless chicken breasts, cubed
  • 1/2 tsp. salt
  • 1/4 tsp. ground pepper
  • 1 tsp. garlic powder
  • 1/2 tsp. caraway seeds
  • 32 oz. can sauerkraut, drained very well
  • 1 cup thousand island dressing
  • 8 oz. swiss cheese

Instructions

  • Place the cubed chicken in the slow cooker and sprinkle with salt, pepper, garlic powder, and caraway seeds. Mix well to combine.
  • Layer the drained sauerkraut over the seasoned chicken evenly.
  • Spread the thousand island dressing on top of the sauerkraut.
  • Add slices of Swiss cheese on top evenly.
  • Cover and cook on low for 5 hours or until the chicken is fully cooked and the casserole is bubbling.
  • Serve hot and enjoy your meal!

Notes

For best results, use refrigerated thousand island dressing for a fresher taste.
Make sure to drain the sauerkraut very well to avoid excess moisture in the casserole.
