Ingredients
Scale
- 13.25 oz white cake mix box
- ½ cup unsalted butter (113 g), melted, slightly cooled
- 2 large eggs
- 5 tablespoons rainbow confetti sprinkles, plus more for rolling
- 1 teaspoon pure vanilla extract, optional
- ¼ teaspoon almond extract, optional
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix together the dry cake mix, melted butter, eggs, and optional extracts until a thick dough forms.
- Fold in the rainbow sprinkles gently without over-mixing, allowing the dough to remain sticky.
- Let the dough rest for about 5 minutes to thicken up.
- Use a medium cookie scoop to portion out the sticky dough into balls.
- Roll each ball in additional sprinkles, pressing gently to ensure they stick.
- Place the coated dough balls on the baking sheets, spaced about 3 inches apart. Bake for 10-12 minutes until the edges are set but the centers are slightly underdone.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack for further cooling.
Notes
For an extra flavor boost, consider adding more sprinkles to the dough or using flavored extracts.
These cookies are best enjoyed fresh but can be stored in an airtight container for up to a week.
