Description

This Easy Cucumber Tomato Dill Salad combines fresh cucumbers and juicy tomatoes with a zesty dressing, making it an ideal choice for a quick and healthy side dish or a light lunch. Perfect for summer meals or any time you crave a refreshing dish!


Ingredients

  • 1 English cucumber
  • 1 teaspoon kosher salt
  • 12 ounces Campari tomatoes
  • 1/4 small red onion, peeled and thinly sliced
  • 3 tablespoons champagne vinegar, red wine vinegar, or cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/3 cup chopped fresh dill
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Slice the cucumber in half lengthwise and scoop out the seeds, then slice into thick half-moons and place in a large bowl.
  2. Sprinkle cucumbers with 1/2 teaspoon kosher salt and let sit for about 5 minutes to crisp and release moisture; afterwards, discard the released cucumber water.
  3. Slice the tomatoes into thick wedges and add them to the bowl with the sliced red onion.
  4. Drizzle with vinegar, olive oil, honey, and the remaining kosher salt and black pepper.
  5. Toss the salad gently with a spoon to combine the ingredients.
  6. Sprinkle the salad with chopped dill and toss again before serving chilled or at room temperature.

Notes

Allow the cucumbers to sit for a few minutes after salting to enhance their crispness.
For added flavor, let the salad chill in the fridge for at least 30 minutes before serving.
