- 1 teaspoon kosher salt
- 12 ounces Campari tomatoes
- 1/4 small red onion, peeled and thinly sliced
- 3 tablespoons champagne vinegar, red wine vinegar, or cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/3 cup chopped fresh dill
- 1/2 teaspoon freshly ground black pepper
Instructions
- Slice the cucumber in half lengthwise and scoop out the seeds, then slice into thick half-moons and place in a large bowl.
- Sprinkle cucumbers with 1/2 teaspoon kosher salt and let sit for about 5 minutes to crisp and release moisture; afterwards, discard the released cucumber water.
- Slice the tomatoes into thick wedges and add them to the bowl with the sliced red onion.
- Drizzle with vinegar, olive oil, honey, and the remaining kosher salt and black pepper.
- Toss the salad gently with a spoon to combine the ingredients.
- Sprinkle the salad with chopped dill and toss again before serving chilled or at room temperature.
Notes
Allow the cucumbers to sit for a few minutes after salting to enhance their crispness.
