Description

This Elegant Graduation Cake combines delicious yellow and chocolate flavors with a charming fondant cap topper. Perfect for graduations, this easy recipe creates a visually stunning dessert that everyone will love.


Ingredients

  • 2 Yellow sheet cake
  • 2 Chocolate sheet cake
  • 1 Cotton candy cake
  • 10 cups American buttercream frosting (Tinted yellow with gel food coloring)
  • 4 cups Marshmallow fondant (2 cups of black and 2 cups of white)
  • 1 batch Rice krispie treats (Can also use store-bought)

Instructions

  1. Bake 2 yellow sheet cakes, 2 chocolate sheet cakes, and 1 cotton candy dome cake, allowing them to cool completely.
  2. Prepare the yellow buttercream frosting while the cakes are baking and cooling.
  3. For the cap cake, place the dome cake on a cake board and frost it with buttercream, chilling for 20 minutes.
  4. Roll out black fondant and cover the chilled dome cake smoothly, trimming excess with a pizza cutter.
  5. Cut a square cardboard piece for the cap, color the edges with a black edible marker, and cover the top with black fondant.
  6. For the cap's final touch, cut a small circle of fondant, brush corn syrup on the cardboard, and attach a folded ribbon before placing the circle on top.
  7. Secure this cap piece on top of the dome cake using melted chocolate or royal icing and steam to remove excess powdered sugar.
  8. For the diploma, roll rice krispie treats into a cylinder, cover with buttercream, and wrap in white fondant.
  9. Attach two circles of white fondant to the diploma log ends with buttercream icing and secure with a red ribbon.
  10. Assemble the cake by placing the chocolate sheets on a large board, icing them, and stacking the yellow sheets on top, icing through the layers.
  11. Pipe roses along the cake's sides and top with yellow icing and a star tip.
  12. Plan where to place the cap and diploma on the cake and insert dowels or straws for support before final placement.
  13. Cut out 'Congratulations Class of 2024' letters with cookie cutters and attach them to the cake board with icing.

Notes

Make sure the cakes are fully cooled before frosting to avoid melting.
Using store-bought rice krispie treats can save time on preparation.
For a cleaner finish, use a fondant smoother on the cake decorations.
