Description

Enjoy Elote, a delicious grilled Mexican street corn featuring sweet corn on the cob slathered with creamy mayonnaise, tangy lime, and topped with cotija cheese. Perfect for summer barbecues or a quick side at dinner!


Ingredients

  • 4 ears of corn, husked
  • ½ cup mayonnaise
  • 1 tablespoon lime juice (about ½ medium lime)
  • 1 clove garlic, finely minced or grated
  • ½ teaspoon cayenne, divided (or chili powder)
  • 2 tablespoons unsalted butter, melted
  • ½ cup crumbled cotija cheese
  • ¼ cup chopped cilantro

Instructions

  1. Boil a large pot of water over high heat and cook the corn for 5 minutes until tender and bright yellow. Transfer the corn to a plate and allow it to cool.
  2. In a small bowl, combine mayonnaise, lime juice, garlic, and ¼ teaspoon cayenne.
  3. Using a brush or spoon, coat the corn with melted butter, then cover each ear with the mayonnaise mixture.
  4. Generously sprinkle cotija cheese, the remaining cayenne pepper, and chopped cilantro on each ear of corn.

Notes

For a spicier kick, add more cayenne pepper to taste.
Make sure to grill the corn for a smoky flavor if preferred.
