Description

  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat the oven to 450 degrees.
  • In a large skillet over medium heat, melt 2 tablespoons of butter.
  • Add the chopped onions and cook for 3-4 minutes until they are translucent, stirring occasionally.
  • Transfer the cooked onions to a mixing bowl and allow them to cool for 2-3 minutes.
  • Mix in the crumbled blue cheese, panko breadcrumbs, kosher salt, and ground black pepper.
  • Gently mash the mixture together using a fork to combine.
  • In the skillet, melt the remaining 2 tablespoons of unsalted butter over high heat.
  • Season the filet mignon steaks generously with kosher salt and ground black pepper.
  • Sear the steaks in the skillet for 3 minutes on each side, until browned.
  • Top the seared steaks with the blue cheese mixture and transfer the skillet to the preheated oven.
  • Bake for 4 minutes for rare, 5-6 minutes for medium, or longer for well done steaks.
  • Allow the steaks to rest for 10 minutes, covered with foil, before serving.

Notes

For best results, use room temperature steaks before cooking for even cooking.
Let the steaks rest to retain their juices and enhance flavor.
