- 1 yellow onion, chopped
- 1/3 cup crumbled blue cheese
- 1/4 cup panko breadcrumbs

- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

Instructions
- Preheat the oven to 450 degrees.
- In a large skillet over medium heat, melt 2 tablespoons of butter.
- Add the chopped onions and cook for 3-4 minutes until they are translucent, stirring occasionally.
- Transfer the cooked onions to a mixing bowl and allow them to cool for 2-3 minutes.
- Mix in the crumbled blue cheese, panko breadcrumbs, kosher salt, and ground black pepper.
- Gently mash the mixture together using a fork to combine.
- In the skillet, melt the remaining 2 tablespoons of unsalted butter over high heat.
- Season the filet mignon steaks generously with kosher salt and ground black pepper.
- Sear the steaks in the skillet for 3 minutes on each side, until browned.
- Top the seared steaks with the blue cheese mixture and transfer the skillet to the preheated oven.
- Bake for 4 minutes for rare, 5-6 minutes for medium, or longer for well done steaks.
- Allow the steaks to rest for 10 minutes, covered with foil, before serving.
Notes
For best results, use room temperature steaks before cooking for even cooking.
