Ingredients

  • 2 ⅔ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 ½ teaspoons baking powder
  • 1 teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 1 cup unsalted butter, room temperature
  • 1 ¼ cups granulated sugar
  • ¼ cup light brown sugar, firmly packed
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon almond extract
  • ½ cup jimmies sprinkles
  • ½ cup granulated sugar for rolling the cookie dough balls

Instructions

  1. In a medium mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and baking soda. Set the mixture aside.
  2. In a large mixing bowl, beat the butter, granulated sugar, and light brown sugar using a hand mixer or stand mixer on medium speed for 3 to 4 minutes. Ensure the mixture is light and fluffy, scraping the bowl as needed.
  3. Lower the mixer speed and add in the egg, followed by the egg yolk, mixing until fully combined. Add in the vanilla and almond extract, and continue mixing until everything is blended.
  4. Gradually add in the dry ingredients, half a cup at a time, while mixing on low speed. Scrape the bowl as needed until there are no visible flour streaks. Finally, add in the jimmies sprinkles and mix until well combined.
  5. Prepare a baking sheet with parchment paper or a silicone mat.
  6. Use a #40 scoop (2 tablespoons) to portion out the cookie dough. If a larger cookie is desired, use heaping scoops. Place the dough balls on the prepared baking sheet and refrigerate for 2 hours or overnight.

Notes

Ensure butter is at room temperature for easy blending.
Using clear vanilla extract will result in slightly lighter cookies.
Chilling the dough enhances the flavor and texture.
