- 2 cups all purpose flour (plus more if needed)
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup butter (softened slightly)
- 3/4 cups sugar
- 1 large egg
- 3/4 teaspoons pure vanilla extract
- 1/2 teaspoon almond extract
- 16 ounces white chocolate
- 1/3 cup light corn syrup (plus more if needed)
- food coloring (flesh tone and other color for your grad caps)
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a bowl, mix the flour, salt, and baking powder, setting it aside.
- Cream the softened butter with sugar until light and fluffy.
- Stir in the egg, vanilla, and almond extract.
- Combine the dry ingredients with the butter mixture until just mixed; add more flour if sticky.
- Roll out the dough to about 1/8th inch thickness on a floured surface.
- Cut twelve 3-inch circles and make diamond-shaped grad caps from the dough.
- Make a triangle notch in each circle using the diamond cutter and insert the diamond-shaped dough into the notch, pressing the seams together.
- Bake for 10-14 minutes or until edges are set and tops look dry.
- Allow cookies to cool completely before decorating.
- For modeling chocolate, reserve 2 tablespoons white chocolate for tassels and color the rest with flesh tone food coloring and another color for caps.
- Let the colored modeling chocolate rest for 30 minutes at room temperature.
- Roll out the flesh tone chocolate to 1/16th inch thickness and cut twelve 3-inch circles, followed by making diamond-shaped grad caps from colored chocolate.
- Brush corn syrup over cookies and attach the chocolate parts, pressing the seams together.
- Create tassels by rolling colored modeling chocolate and using a clay extruder for strands; attach to the caps with corn syrup.
Notes
Ensure to flour the surface well to roll out the dough smoothly.
Allow the cookies to cool completely before applying decorations to avoid melting.
