Ingredients

- 5 ounces of feta cheese
- ½ cup of greek yogurt, or yogurt of choice
- 1 avocado, pitted and removed from skin
- 3 cloves of garlic
- 1 ½ tablespoons of lemon juice
- ½ cup of fresh dill, packed
- ¼ cup of mint, packed
- ½ cup of green onions, lightly chopped
- ⅓ cup of fresh basil, packed
- 1 teaspoon of dijon mustard
- ¼ cup of olive oil
- ¼–½ cup of water to thin
- Salt and pepper to taste, the feta is quite salty so you may need no additional salt
Instructions
- Combine all ingredients except olive oil in a food processor or blender, omitting salt for now.
- Blend on high for 1-2 minutes until creamy and mostly smooth, adding more water for desired consistency.
- While blending, slowly drizzle in the olive oil and continue to blend for 30 seconds.
- Taste the dip and adjust for salt and pepper as needed; serve immediately.
- Store any leftovers in an airtight container for up to 5 days, noting that the color may change due to the avocado.
Notes
For a thinner consistency, gradually add more water as needed while blending.
