Description

  • 2 pounds carrots (about 1216 medium carrots, about 1-inch in diameter)
  • 1 1/2 tablespoons coconut oil, melted
  • 1 teaspoon cinnamon
  • 1 teaspoon chipotle paste
  • 1/2 teaspoon chili powder
  • salt, to taste
  • for topping – fresh cilantro

Instructions

  1. Preheat the grill to medium-high heat.
  2. Wash and peel the carrots thoroughly.
  3. In a small bowl, mix together the coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub the mixture evenly over the carrots using your hands.
