- 12 dry lasagna noodles
- 1 teaspoon kosher salt
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 15 ounces ricotta cheese
- 1 large egg
- 3 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 375 degrees Fahrenheit and spray a 9 by 13 inch baking dish with cooking spray.
- Boil a large pot of water with one teaspoon of kosher salt, then add the dry lasagna noodles and cook according to package instructions. Drain and set aside, keeping some noodles in case of breaks.
- In a large skillet over medium heat, cook the ground beef, breaking it up as it browns. Add chopped onion and minced garlic, stirring until the onion softens, about 3 minutes. Drain excess grease.
- Stir in marinara sauce, oregano, basil, salt, pepper, and red pepper flakes. Simmer for 10 minutes.
- In a separate bowl, mix ricotta, egg, 1 1/2 cups mozzarella, Parmesan cheese, and parsley together.
- Spread 1/2 cup of the sauce at the bottom of the baking dish.
- On a large baking sheet, lay the cooked noodles. Spread about 1/4 cup of the cheese mixture on each noodle and top with about one tablespoon of meat sauce. Roll the noodles and place them in the baking dish. Make approximately 16 roll ups. Pour remaining sauce over the roll ups and sprinkle with the rest of the mozzarella cheese.
- Cover with foil and bake for 30 to 35 minutes. Remove foil and broil for a few minutes to brown the cheese.
Notes
Make sure to cook extra lasagna noodles in case some break during preparation.
Feel free to add veggies like spinach or mushrooms for added nutrition.
