  • 2 2/3 cups over ripe mashed bananas
  • 1/3 cup creamy peanut butter
  • 1 cup chocolate almond milk
  • 1/4 cup maple syrup
  • 2 1/2 tsp vanilla extract
  • 3 cups rolled oats
  • 1/2 cup cocoa powder
  • mini-vegan chocolate chips

Instructions

  • Preheat the oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray.
  • Mash enough over ripe bananas to yield 2 2/3 cups.
  • In a large bowl, combine the mashed bananas, peanut butter, almond milk, maple syrup, and vanilla extract. Mix until well combined.
  • Stir in the rolled oats and cocoa powder until evenly mixed together.
  • Pour the mixture into the prepared pan and spread it evenly.
  • Sprinkle the top with your desired amount of vegan chocolate chips.
  • Bake for 30 minutes, then turn off the oven and let the baked oatmeal sit in the oven for an additional 20 minutes.
  • Once cooled, you can optionally garnish with a drizzle of melted creamy peanut butter.

Notes
