- 1 pound thick-cut bacon, (diced)
- 1 large yellow onion, (finely diced (about 1 ½ cups))
- 3 cups (495 g) fresh pineapple, (finely diced (about ½ of a medium pineapple))
- 2 teaspoons garlic, (minced)
- ½ cup (100 g) light brown sugar, (packed)
- ¼ cup (60 g) apple cider vinegar
- ¼ cup (79 g) maple syrup
- 1 teaspoon chili powder
- ¼ teaspoon kosher salt
- ¼ teaspoon red pepper flakes, (optional)
Instructions
- In a medium skillet over medium heat, cook the diced bacon until crispy, stirring occasionally. Line a plate with paper towels.
- Using a slotted spoon, transfer the cooked bacon to the lined plate, leaving about ¼ cup of bacon grease in the skillet. Discard the rest.
- Reduce the heat to medium-low and add the diced onion. Cook, stirring often, until softened and beginning to caramelize.
- Add the finely diced pineapple and continue cooking, stirring frequently, until the pineapple releases its juices and begins to soften, about 10 minutes.
- Stir in the garlic and cook for about 30 seconds.
- Add the light brown sugar, apple cider vinegar, maple syrup, chili powder, kosher salt, and red pepper flakes, stirring to combine.
- Return the cooked bacon to the skillet and mix everything together.
- Allow the mixture to simmer over low heat for 20 to 30 minutes, stirring occasionally, until thickened to a jam-like consistency. If too loose, continue cooking until most of the liquid evaporates.
- Let cool slightly before serving. Serve warm or refrigerate and gently reheat before using.
Notes
This jam pairs wonderfully with cream cheese and crackers.
Store any leftovers in an airtight container in the refrigerator for up to one week.
