Description

This Pineapple Coconut Mojito is a refreshing and flavorful cocktail featuring rum, pineapple juice, and creamy coconut milk. Perfect for tropical celebrations and easy enough to make at home, it’s sure to impress at any gathering!


Ingredients

Scale
  • 3 mint leaves
  • 1 teaspoon brown sugar
  • ice
  • 2 ounces rum
  • 2 ounces pineapple juice
  • 1 ounce coconut milk
  • ¾ ounce lime juice
  • club soda

Instructions

  1. Place mint leaves and brown sugar in a cocktail shaker and muddle to release the mint oils.
  2. Fill the shaker halfway with ice and add rum, pineapple juice, coconut milk, and lime juice.
  3. Cover the shaker and shake vigorously for about 10 seconds until chilled and mixed.
  4. Strain the mixture into a highball glass over fresh ice.
  5. Top with club soda, garnish as desired, and serve immediately.
