Description

Ingredients

  • 2 medium red onions
  • 1 cup water
  • 1 tsp salt
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp sugar of choice
  • 1 cup white vinegar

Instructions

  1. In a saucepan, heat the water on the stove and turn off the heat before it starts simmering, then set aside.
  2. Slice the onions thinly into rings or half-moons using a knife or mandoline.
  3. Transfer the sliced onions to a large mason jar or use 2-3 smaller jars.
  4. Add the salt, red pepper flakes (if desired), sugar, and white vinegar to the warm water and stir until dissolved.
  5. Pour the mixture over the onions in the jar. Press the onions down gently with a spoon, close the lid, and refrigerate.
  6. For best flavor, marinate overnight, though they can be tried after 30 minutes.

Red pepper flakes can be adjusted to taste for a milder or spicier kick.
These pickles can last in the fridge for up to 2 weeks, becoming more flavorful over time.
