Ingredients
Scale
- 3 eggs (~55g/2 oz each)
- 125g / 4.5 oz dark cooking chocolate , bittersweet / 70% cocoa
- 10g / 0.3 oz unsalted butter
- 1/2 cup cream , full fat
- 3 tbsp caster sugar (superfine white sugar)
- more whipped cream
- chocolate shavings
Instructions
- Work at a steady pace to keep whipped egg whites and cream from warming up.
- Separate the eggs while they are cold. Place the whites in a large bowl and the yolks in a small bowl. Set the whites aside as you prepare the other ingredients.
- Whisk yolks until they are uniform.
- Melt the chocolate and butter by breaking the chocolate into pieces and placing them in a microwave-proof bowl with the butter. Microwave in 30-second bursts, stirring in between, until smooth. Allow it to cool slightly while continuing with the steps.
- Beat the cream until stiff peaks form, being careful not to over-whip.
- Add sugar to the egg whites and beat until firm peaks form.
Notes
Ensure egg whites and cream stay cool to achieve the best texture.
You can use different types of dark chocolate for varied flavors.
This mousse can be served with extra whipped cream or chocolate shavings for garnish.
