- 2 pounds sweet potatoes (peeled)
- 2 tablespoons olive oil
- ½ teaspoon garlic powder (or ½ teaspoon cinnamon)
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper (or to taste)
Instructions
- Preheat the oven to 400°F.
- Cut the sweet potatoes into 1-inch cubes and toss them with olive oil, garlic powder or cinnamon, salt, and black pepper.
- Spread the sweet potatoes in a single layer on a sheet pan and roast for 35-40 minutes or until fork tender, stirring after the first 20 minutes.
Notes
Feel free to substitute the garlic powder with cinnamon for a sweeter taste.
Make sure the sweet potatoes are cut evenly for uniform roasting.
You can add herbs like rosemary or thyme for extra flavor.
