Ingredients

- 1 pound kielbasa or smoked sausage, sliced into 1-inch coins
- 1 pound red potatoes, cut into 1-inch chunks
- 1 red bell pepper, sliced into strips
- 1/2 head small green cabbage, chopped into bite-size pieces
- 2–3 tablespoons olive oil
- salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon italian seasonings
Instructions
- Preheat the oven to 425°F.
- Line a large rimmed baking sheet with heavy-duty foil. Spread the sausage coins, potatoes, bell peppers, and cabbage evenly over the foil.
- Drizzle the sausage and vegetables with olive oil. Season with salt, pepper, garlic powder, and Italian seasonings, then toss gently to combine.
- Bake in the oven for 25-30 minutes until the potatoes are fork-tender and the ingredients are golden brown. Serve immediately.
