This Simple Air Fryer Roast Chicken is juicy and flavorful, featuring a whole chicken stuffed with lemon and perfectly seasoned. Ideal for a quick weeknight dinner!

- 1 whole chicken (3.5 pounds, giblets removed)
- 1/2 lemon
- 1.5 tablespoons butter (softened)
- Salt & pepper (to taste)
Instructions
- Dry the chicken with paper towels and pierce the lemon half with a knife a few times before placing it in the chicken's cavity.
- Rub half of the softened butter on the chicken's breast side, then season generously with salt and pepper. Turn the chicken over, butter the underside, and season it again with salt and pepper.
- Preheat the air fryer to 350°F.
- Place the chicken in the air fryer basket breast-side down and cook for 30 minutes.
- After 30 minutes, turn the chicken over to breast-side up and cook for an additional 25 minutes or until golden brown and a thermometer reads at least 160°F.
- Let the chicken rest for 10 minutes before carving to allow juices to redistribute.
