Description

This Slow Cooker Reuben Dip features a delightful blend of cream cheese, corned beef, and Swiss cheese, making it the perfect choice for a quick, delicious dinner. It’s simple to prepare and packed with flavor, making it an ideal comfort food for gatherings or a cozy night in.


Ingredients

  • 16 oz. cream cheese, softened (two 8-oz. pkgs.)
  • 1 lb deli sliced corned beef or pastrami, roughly chopped
  • 2 cups swiss cheese, shredded
  • 1 cup sauerkraut, drained
  • 1 cup sour cream
  • ¾ cup thousand island dressing
  • rye bread
  • rye chips and crackers
  • French bread
  • veggies

Instructions

  1. In a large bowl, mix all the ingredients until they are well combined.
  2. Transfer the mixture to a 4 quart or larger slow cooker bowl.
  3. Set the slow cooker to LOW heat and cook for 2 hours or until the cheese has melted and the dip is hot and bubbling.
  4. Garnish with sliced green onion or parsley, if desired, and serve with rye chips, crackers, or bread.

Notes

Feel free to adjust the amount of sauerkraut to taste.
This dip can be served with a variety of breads or vegetables for dipping.
