Description

This Soft Scrambled Eggs with Smoked Salmon & Chives dish combines the creaminess of eggs with the rich flavor of smoked salmon and fresh chives. Ingredients

  • 1 tablespoon salted butter
  • 4 large eggs
  • 2 tablespoons milk or cream
  • Salt & pepper to taste
  • 2 ounces smoked salmon
  • chopped chives for garnish

Instructions

  • Melt the butter in a nonstick pan over medium heat.
  • In a bowl, whisk the eggs and milk (or cream). Season with salt and pepper. Pour the mixture into the pan with the melted butter.
  • Gently scramble the eggs, stirring occasionally with a spatula until soft curds begin to form but the eggs are not fully cooked.
  • Add the smoked salmon and continue scrambling until the eggs are just set but still moist.
  • Garnish with chopped chives and serve either directly in the pan or on plates.

Notes

For extra creaminess, use cream instead of milk.
Adjust seasoning to taste, especially since smoked salmon can be salty.
