Description
These Spring Brunch Puff Pastry Egg Tarts are a delightful combination of crispy pastry, savory bacon, and creamy egg filling. Perfect for brunch, they’re easy to make and full of flavor!
Ingredients
Scale
- 4 slices of original bacon, cut into 1 inch pieces
- 13 ounces puff pastry dough, thawed completely (not frozen)
- 4 eggs
- 1 tablespoon water
- 1/3 cup whole milk
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon dijon mustard
- 1 cup cheddar cheese, grated from the block
- 1/4 cup green onion for serving, sliced thinly on a bias
Instructions
- Preheat the oven to 375°F. In a skillet over medium-low heat, cook the bacon until crispy, then transfer it to a paper towel-lined plate to drain the grease and set aside.
- In a bowl, combine one egg with the water to make an egg wash using a fork or whisk.
- Line a full-size cookie sheet with parchment paper. Unroll the puff pastry and cut it into 8 equal rectangular pieces, spacing them apart on the sheet. Use a paring knife to create a border around the inside of the pastry and fork prick the center. Brush the tops with egg wash and bake for 10 minutes.
- While the dough is baking, whisk together the remaining 3 eggs, milk, dijon mustard, salt, and pepper in a bowl.
- Remove the puff pastry from the oven and use the back of a fork to press down the centers, keeping the edges puffed.
- Carefully pour the egg mixture into each tart, avoiding overfilling, and sprinkle half of the cheddar cheese on top. Return to the oven and bake for another 10 minutes.
- Afterwards, remove from the oven, sprinkle with bacon pieces and the remaining cheese, and bake for an additional 5 minutes.
- Top with green onions and serve with dijonnaise sauce if desired.
Notes
For a lighter version, you can substitute turkey bacon for original bacon.
Make sure to watch the puff pastry while baking to prevent over-browning.
