Description

These Spring Brunch Puff Pastry Egg Tarts are a delightful combination of crispy pastry, savory bacon, and creamy egg filling. Perfect for brunch, they’re easy to make and full of flavor!


Ingredients

  • 4 slices of original bacon, cut into 1 inch pieces
  • 13 ounces puff pastry dough, thawed completely (not frozen)
  • 4 eggs
  • 1 tablespoon water
  • 1/3 cup whole milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon dijon mustard
  • 1 cup cheddar cheese, grated from the block
  • 1/4 cup green onion for serving, sliced thinly on a bias

Instructions

  1. Preheat the oven to 375°F. In a skillet over medium-low heat, cook the bacon until crispy, then transfer it to a paper towel-lined plate to drain the grease and set aside.
  2. In a bowl, combine one egg with the water to make an egg wash using a fork or whisk.
  3. Line a full-size cookie sheet with parchment paper. Unroll the puff pastry and cut it into 8 equal rectangular pieces, spacing them apart on the sheet. Use a paring knife to create a border around the inside of the pastry and fork prick the center. Brush the tops with egg wash and bake for 10 minutes.
  4. While the dough is baking, whisk together the remaining 3 eggs, milk, dijon mustard, salt, and pepper in a bowl.
  5. Remove the puff pastry from the oven and use the back of a fork to press down the centers, keeping the edges puffed.
  6. Carefully pour the egg mixture into each tart, avoiding overfilling, and sprinkle half of the cheddar cheese on top. Return to the oven and bake for another 10 minutes.
  7. Afterwards, remove from the oven, sprinkle with bacon pieces and the remaining cheese, and bake for an additional 5 minutes.
  8. Top with green onions and serve with dijonnaise sauce if desired.

Notes

For a lighter version, you can substitute turkey bacon for original bacon.
Make sure to watch the puff pastry while baking to prevent over-browning.
