- 6 large eggs (room temperature)
- 1 cup granulated sugar
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 4 ounces cream cheese (room temperature)
- 4 ounces mascarpone cheese (cold)
- 1 cup butter (room temperature)
- 5 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup strongly brewed coffee or espresso
- 1/4 cup unsweetened cocoa powder (for garnish)
Instructions
- Preheat the oven to 350°F. Grease the bottoms of three 6-inch round cake pans and line them with parchment paper.
- In a stand mixer, beat the eggs on medium-high speed while gradually adding sugar until the batter reaches the 'ribbon stage'.
- Sift the flour, baking powder, and cinnamon into the mixture and fold gently to combine.
- Divide the batter among the pans and bake for 15-18 minutes until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Optional: Freeze the cakes for at least 4 hours for easier frosting.
- For the frosting, beat cream cheese, mascarpone, and butter until smooth.
- Slowly add the powdered sugar and mix, scraping down the bowl as needed.
- Add vanilla extract and beat on high until the frosting is light and fluffy.
- Brush cooled layers with espresso, stack them on a cake stand, and spread frosting between layers.
- Top with the final layer and smooth frosting on the top and sides. Decorate with a piping bag if desired.
- Sift cocoa powder over the top and refrigerate for 4 hours before serving.
