- 8 ounces cream cheese, softened

- 1/2 cup milk
- 1/2 cup butter, melted

- 1 teaspoon onion powder
- 1 1/2 cups shredded cheddar cheese
- 1 cup crumbled bacon
- Salt and pepper to taste
- 1/4 cup chopped green onions (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and pierce the russet potatoes with a fork. Bake until tender, about 1 hour.
- Allow the potatoes to cool slightly before peeling them.
- In a large bowl, mash the peeled potatoes until smooth.
- Mix in cream cheese, sour cream, milk, and melted butter, blending well.
- Add garlic powder, onion powder, salt, and pepper to the mix and stir until the ingredients are well combined.
- Fold in the shredded cheddar cheese and crumbled bacon, reserving some of each for topping.
- Transfer the potato mixture into a greased casserole dish, smoothing out the top.
- Sprinkle the remaining cheese and bacon over the top of the casserole.
- Bake for 30-35 minutes until the top is golden and bubbly.
- Garnish with chopped green onions before serving.
