Description

These Valentine Strawberry Cake Truffles offer an irresistible flavor and simple prep using strawberry cake mix and cream cheese. Perfect for sweet cravings and homemade celebrations!


Ingredients

  • 15.25 ounce strawberry cake mix
  • 8 ounce block cream cheese, softened to room temperature
  • ⅓ cup cream cheese chips, roughly chopped
  • 2 10 oz bags ghirardelli vanilla melting wafers
  • ½ cup wilton pink candy melts
  • ½ cup wilton bright pink candy melts
  • Sprinkles, optional

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper. Heat treat the cake mix by spreading it onto the prepared baking sheet and baking for 5 minutes.
  • Remove the cake mix from the oven and let it cool completely on a wire rack.
  • While cooling, place softened cream cheese in a mixing bowl and beat with a hand mixer until smooth and creamy.
  • Incorporate the cooled cake mix into the cream cheese, folding initially with a spatula, then mix with a hand mixer until a dough forms.
  • Gently fold in cream cheese chips until evenly distributed.
  • Cover the dough with plastic wrap and refrigerate for 2 hours.
  • Line two baking sheets with parchment paper. Using a cookie scoop, form the dough into balls and place them on the sheets. Let them rest for 15 minutes to expand slightly.
  • Prepare a double boiler or use a microwave to melt the vanilla melting wafers, stirring until fully melted.
  • Dip each dough ball in the melted wafers using a fork, tapping off excess coating, and place them back on the lined sheets.
  • Sprinkle your choice of sprinkles on half of the coated dough balls before the coating sets.
  • Melt the pink candy melts in piping bags, cut the tips, and drizzle over the remaining coated cake balls.
  • Allow the truffles to set completely before serving.

Notes

Ensure to heat treat the cake mix to eliminate any bacteria.
Allow the truffles to sit after rolling to prevent cracking of the coating.
Using a double boiler prevents overheating the melting wafers.
