- 1 cup espresso
- 1/2 cup brown sugar
- 1 cup white chocolate
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1 tablespoon gelatin
- 1 cup mascarpone
- 1/2 cup molasses
- 1 egg yolk
- 2 teaspoons ginger
Instructions
- Bloom the gelatin in cold water.
- In a saucepan, mix warm espresso and brown sugar, stirring until dissolved. Add white chocolate, cinnamon, cloves, and nutmeg; stir until smooth and cool slightly.
- In a bowl, beat mascarpone and heavy cream until soft peaks form. Fold in the cooled mousse base until blended.
- In another bowl, combine flour, ginger, and salt. Mix in molasses and egg yolk until a soft dough forms. Roll it out and cut circles for cookie bases.
- Grease silicone dome molds and fill with mousse leaving space at the top. Press cookie rounds into the mousse and freeze overnight.
- Once frozen, warm glazing ingredients. Remove mousse domes from molds, place on a wire rack, and pour glaze over them.
- Transfer glazed domes onto a serving plate and decorate with cocoa powder or mini gingerbread cookies.
Notes
Ensure the gelatin is fully bloomed before mixing for the best consistency.
Adjust the spices according to personal taste preferences, adding more ginger or cinnamon if desired.
Store any leftovers in the freezer for a cool treat later.
