Description

These Valentines Love Letter Pastries are a delightful treat, showcasing a flaky pastry filled with strawberry jam. With minimal prep and delicious flavors, they’re ideal for special occasions or sweet snacks.


Ingredients

Scale
  • 240g of plain flour
  • 2 tablespoons of caster sugar (plus extra for sprinkling)
  • 220g of dairy-free block butter (cold and cut into small cubes)
  • ice-water (see method)
  • 1 jar of vegan friendly strawberry jam
  • dairy-free milk (optional)
  • icing sugar (dusting, optional)

Instructions

  • Sift together the flour and sugar in a bowl. Mix in the cold butter until it resembles sand, using a food processor or your hands.
  • Gradually add ice water, 1/2 tablespoon at a time, until a smooth, slightly sticky dough forms—about 1-2 tablespoons should suffice.
  • Wrap the dough in greaseproof paper and refrigerate for 30 minutes to prevent sticking during rolling.
  • Preheat the oven to 170°C fan and line two baking trays with greaseproof paper.
  • Dust your work surface with flour and roll out the dough between two sheets of floured greaseproof paper into a large rectangle. Cut it into diamond shapes (10cm on each side) and place them on the trays. Use a mini heart cutter for the remaining dough.
  • Spoon strawberry jam into the center of each diamond. Fold in three corners to create an envelope shape, sealing the jam inside.
  • Brush the pastries with dairy-free milk and add the heart shapes on top. Sprinkle sugar for a golden finish.
  • Bake for 20-25 minutes until golden brown. Let cool before serving.
  • Dust with icing sugar and enjoy!

Notes

Ensure butter is cold for a flaky texture.
Chill the dough to make it easier to work with.
These pastries can be served warm or at room temperature.
