Air Fryer Greek Roasted Potatoes are a delightful side dish packed with flavor. Featuring baby yukon gold potatoes coated in zesty Greek dressing, this recipe makes for a simple and healthy addition to any meal, perfect for quick dinners or gatherings.

  • ¼ cup greek salad dressing
  • 1 1/2 teaspoons greek seasoning blend
  • ½ lemon juice of

Instructions

  1. Chop the baby yukon gold potatoes in half; quarter any extra large ones. Place the chopped potatoes in a large bowl and cover with cold water, letting them soak for 30 minutes.
  2. Drain and rinse the potatoes under fresh water.
  3. Thoroughly dry the potatoes before transferring them to a mixing bowl. Add the Greek salad dressing and Greek seasoning, tossing to ensure an even coating.
  4. Spray the air fryer basket with non-stick spray. Place the seasoned potatoes in the basket and air fry at 400°F (200°C) for 20 minutes, shaking the basket every 5 minutes for even cooking.
  5. Taste the potatoes and add more Greek seasoning if desired. Serve hot, garnished with minced parsley and a squeeze of lemon juice.

Notes

For best results, ensure potatoes are dried well before seasoning to achieve a crisp texture.
Adjust the amount of Greek seasoning according to your taste preferences.
