- 1 1/2 teaspoons greek seasoning blend

Instructions
- Chop the baby yukon gold potatoes in half; quarter any extra large ones. Place the chopped potatoes in a large bowl and cover with cold water, letting them soak for 30 minutes.
- Drain and rinse the potatoes under fresh water.
- Thoroughly dry the potatoes before transferring them to a mixing bowl. Add the Greek salad dressing and Greek seasoning, tossing to ensure an even coating.
- Spray the air fryer basket with non-stick spray. Place the seasoned potatoes in the basket and air fry at 400°F (200°C) for 20 minutes, shaking the basket every 5 minutes for even cooking.
- Taste the potatoes and add more Greek seasoning if desired. Serve hot, garnished with minced parsley and a squeeze of lemon juice.
