Ingredients
Scale
- 1 cup peeled, cored, and chopped apples (½” pieces)
- ⅛ teaspoon ground cinnamon
- 1 tablespoon dark brown sugar
- 1¼ cups all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter, melted
- ¾ cups dark brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 tablespoons milk
Instructions
- In a frying pan over medium heat, combine the chopped apples, brown sugar, and cinnamon. Cook for about 5 minutes until the apples are softened, then transfer to a plate to cool.
- Preheat the oven to 350°F. Grease and line an 8×8” pan with parchment paper, ensuring there’s an overhang for easy removal.
- In a large bowl, mix the flour, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk the melted butter, brown sugar, egg, and vanilla until smooth.
- Combine the wet and dry ingredients, folding gently with a spatula until combined. Incorporate the cooled apples and their juices.
- Spread the batter into the prepared pan and bake for 18-22 minutes, until the top is lightly browned. Be careful not to overbake!
- Once baked, cool completely on a wire rack before drizzling with icing.
Notes
These blondies can be stored in an airtight container at room temperature for up to 3 days.
