  • ½ cup chopped apple, about 1/2 a large apple
  • 1 teaspoon maple syrup
  • pinch of cinnamon
  • ½ cup old fashioned oats
  • ½¾ cup unsweetened almond milk
  • ¼ cup plain greek yogurt or coconut yogurt
  • 2 teaspoons maple syrup, honey or your favorite sweetener
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon, or apple pie spice
  • Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds

Instructions

  1. In a microwave-safe bowl, combine the chopped apples, maple syrup, and a pinch of cinnamon. Stir to coat the apples.
  2. Heat the mixture in the microwave for 30-60 seconds until the apples soften slightly. Cool and reserve 1/4 cup for topping later.
  3. In a dish with a lid (a mason jar is ideal), combine oats, almond milk, yogurt, maple syrup, vanilla, and cinnamon.
  4. Stir in 1/4 cup of the prepared cinnamon apples into the oat mixture, then lid the jar and shake to mix well.
  5. Refrigerate overnight or for at least 30-60 minutes if preparing in the morning.
  6. Before serving, remove the lid and add more yogurt or almond milk if the mixture is too thick. Top with the reserved apples and your preferred toppings like nut butter or chopped nuts.

Notes

You can adjust the sweetness by varying the amount of maple syrup or using a different sweetener.
