- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Ensure your blender or food processor has a top opening for adding ingredients.
- Cut the avocado in half, remove the pit and skin, and place the avocado flesh into the blender or food processor.
- Add the white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt to the blender. Do not add the avocado oil yet.
- Secure the lid and blend while slowly drizzling in the avocado oil until fully incorporated. Blend for a few more seconds after all the oil is added.
- Check the dressing’s consistency and saltiness. If a thinner consistency is desired, add another 1/4 cup of avocado oil and blend.
Notes
For a different flavor, try substituting the cilantro with basil or parsley.
This dressing can be adjusted for consistency and flavor – add more oil if needed.
Store any leftovers in the refrigerator for up to 3 days.
