Description

Ingredients

  • 1½ cups flour
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon

  • 1½ cups zucchini grated
  • 2 bananas ripe and mashed
  • 2 eggs
  • ½ cups brown sugar
  • 2 teaspoons vanilla
  • ½ cup vegetable oil

Instructions

  1. Preheat your oven to 350ºF and grease a 4×8 loaf pan. Set the pan aside.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, cinnamon, salt, and nutmeg. Whisk together and set aside.
  3. In a medium-sized bowl, add the grated zucchini and use your hands to squeeze out excess water, ensuring the zucchini is as dry as possible.
  4. To the bowl with the zucchini, add the mashed banana and eggs, mixing well to combine.
  5. Mix in the brown sugar, vanilla, and vegetable oil until evenly blended.
  6. Gently fold the flour mixture into the zucchini mixture until combined, resulting in a thick batter.
  7. Pour the batter into the prepared loaf pan and bake for 45 minutes, or until the top is browned and a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for about 15 minutes before turning it out onto a cooling rack. Slice and enjoy!
