- 2.5 lbs chicken thighs boneless skinless
- 2 tablespoons brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 3 tablespoons avocado oil
- 1 cup homemade southern bbq sauce
Instructions
- In a large bowl, combine the chicken thighs with brown sugar, kosher salt, garlic powder, onion powder, smoked paprika, chili powder, and avocado oil. Mix well to marinate for at least 4 hours or up to overnight.
- Take the chicken out of the fridge 30 minutes prior to cooking.
- Preheat your grill to medium-high heat.
- Place chicken thighs on the grill and reduce the heat to medium. Cook for several minutes on each side until charred and marked.
- When almost cooked through, baste chicken with BBQ sauce and move to indirect heat to allow the sauce to absorb as chicken finishes cooking.
- Monitor internal temperature; once it reaches 175-190°F for dark meat (or 165°F for white meat), remove from heat and serve with extra BBQ sauce.
Notes
Marinating overnight enhances flavors even more.
Adjust cooking time depending on thickness of chicken thighs.
Serve with a side of coleslaw or corn for a complete summer meal.
