- 3 lbs baby back ribs or st. louis ribs
- 1 teaspoon smoked paprika
- 1 tablespoon brown sugar
- ½ teaspoon garlic powder
- 1 teaspoon black pepper
- ½ teaspoon cocoa powder
- ¼ teaspoon cinnamon
- 1 teaspoon kosher salt
- ½ teaspoon smoked sea salt
- 1 teaspoon korean chili flakes or ¼ teaspoon cayenne
Instructions
- Combine all the rub ingredients in a mixing bowl. If the brown sugar has clumps, break them apart with your fingers.
- Set the rub aside for at least 30 minutes before using.
Notes
For enhanced flavor, let the rub sit on the ribs for a few hours before cooking.
Adjust the spice levels by adding more or less chili flakes to suit your taste.
