- 22 oz. full-fat cottage cheese
- 1/4 – 1/3 cup honey
- 1 teaspoon vanilla extract
- 1 cup + 1/3 cup fresh blackberries, separated
- 3 graham cracker sheets, separated
- optional: 1/2 teaspoon flaky salt
Instructions
- Combine the cottage cheese, honey, and vanilla extract in a high-speed food processor. Blend on high until the mixture is thick and creamy, about 3-5 minutes.
- Add 1 cup of blackberries to the food processor and pulse until the blackberries are slightly broken up. The cottage cheese will take on a light purple shade.
- Transfer the mixture to a bowl or a loaf pan. Crumble two of the graham crackers on top and gently mix them in until combined.
- Finish by topping with the remaining blackberries and crumbling the third graham cracker over the top. If desired, sprinkle with flaky salt.
- Cover and freeze for at least 4-6 hours or overnight.
- Serve in bowls or on ice cream cones.
Notes
Using fresh blackberries provides the best flavor and color.
