Ingredients

  • ¾ cup fresh blueberries
  • 1 tablespoon maple syrup
  • 1 teaspoon lemon juice
  • ¾ cup 4% cottage cheese
  • 3 tablespoons maple syrup
  • ½ teaspoon cornstarch
  • ½ teaspoon vanilla bean paste
  • 1 graham cracker, crushed

Instructions

  1. In a small saucepan, combine the blueberries, 1 tablespoon of maple syrup, and lemon juice. Bring to a boil and then reduce heat to low. Simmer for about 10 minutes until the blueberries reduce by half.
  2. Remove from heat and allow to cool for 10 minutes.
  3. Meanwhile, blend the cottage cheese, remaining maple syrup, cornstarch, and vanilla bean paste in a blender until smooth.
  4. In popsicle molds, layer the blended cottage cheese mixture and the cooled blueberry sauce.
  5. Sprinkle the crushed graham cracker on top of the layers.
  6. Freeze the molds for at least 5 hours or overnight.

Notes

Use fresh blueberries for the best flavor, but frozen berries can be substituted.
For a vegan option, replace cottage cheese with a plant-based alternative.
