- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste
- 1 graham cracker, crushed
Instructions
- In a small saucepan, combine the blueberries, 1 tablespoon of maple syrup, and lemon juice. Bring to a boil and then reduce heat to low. Simmer for about 10 minutes until the blueberries reduce by half.
- Remove from heat and allow to cool for 10 minutes.
- Meanwhile, blend the cottage cheese, remaining maple syrup, cornstarch, and vanilla bean paste in a blender until smooth.
- In popsicle molds, layer the blended cottage cheese mixture and the cooled blueberry sauce.
- Sprinkle the crushed graham cracker on top of the layers.
- Freeze the molds for at least 5 hours or overnight.
