Description

These Blueberry Crumble Bars bring a delightful flavor and are easy to prepare. Made with fresh blueberries, and a buttery crust, they are perfect for dessert lovers and make a scrumptious treat at any gathering.

Ingredients

Scale
  • 1 1/2 cups salted butter, softened
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon cornstarch
  • 4 cups fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350℉ and line a 9×13 inch pan with parchment paper.
  2. In a large bowl or stand mixer, combine the softened butter, sugar, vanilla extract, and salt.
  3. Scrape down the sides of the bowl and stir in the all-purpose flour until combined.
  4. Press about 2/3 of the mixture into the prepared pan and bake for 15 minutes.
  5. In a separate bowl, combine the sugar and cornstarch, then add the fresh blueberries and stir until coated.
  6. Spoon the blueberry mixture over the baked crust and spread it evenly.
  7. Add the remaining crumb mixture on top of the blueberries.
  8. Bake for an additional 30-35 minutes, or until golden brown and bubbly.
  9. For the icing, whisk together the powdered sugar and 2 tablespoons of milk, adding more milk if necessary for a drizzling consistency.
  10. Once the bars are cool, drizzle the icing on top and enjoy.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free blend.
These bars can be stored in an airtight container for several days.
They freeze well, so consider making a double batch for future treats.
